A high-performance blower fan with an adjustable cooling-air nozzle supplies air during operation to control product temperature and improve coating quality.
The pan can be tilted, removed, and replaced easily for cleaning or switching between batches, minimizing downtime.

Description

Dark Chocolate Panning Machine :

An industrial chocolate panning machine (also known as a chocolate coating pan or panning drum) is specialized equipment used to coat solid centers—such as nuts, dried fruits, coffee beans, malt balls, and candy centers—with a smooth, uniform layer of chocolate or compound coating.

Unlike dragée pans used for hard sugar shells, chocolate panning systems integrate refrigerated dehumidified air blowers to rapidly solidify liquid chocolate sprayed onto the tumbling centers before polishing.

Chocolate Covered Almonds Coating Panning Process :

  1. Pre-Treating / Gumming: Raw centers (e.g., roasted hazelnuts or almonds) are sealed with a thin layer of gum arabic or starch solution to prevent natural oils from migrating into the chocolate layer.

  2. Chocolate Dosing: Liquid tempered chocolate is sprayed via air-assisted atomizing nozzles onto the centers as the drum rotates at controlled speeds.

  3. Cooling & Setting: A continuous stream of chilled, dehumidified air (typically 12°C–15°C) is blown directly into the drum. This quickly sets the chocolate, allowing layer upon layer to build up smoothly.

  4. Polishing & Glazing: Once the desired thickness is achieved, a food-grade glaze or polishing liquid (shellac/gum resin solution) is applied to give the dragées a high-gloss, fingerprint-resistant shine.
